Orzotto with dried King Oyster mushrooms

We evolved risotto & made it orzotto! The favorite pasta in a wonderful version with dried King Oyster mushrooms.

• One package of dried King Oyster mushrooms
• 250g orzo
• 1 diced tomato
• Juice from one tomato
• 1 chopped green pepper
• 2 chopped green onions
• 1 minced garlic clove
• A little dried basil
• Salt and pepper
• A little olive oil

Soak the dried King Oyster mushrooms in warm water for 15′.
After they soften, in a pan, saute the mushrooms with olive oil.
Add the onions, garlic, pepper, basil, and diced tomatoes.
In an ovenproof dish, place the orzo with the tomato juice, olive oil & the mixture that we sauteed.
Season with salt and pepper & add a little water.
Bake at 180 °C for about 30′.
Serve immediately and sprinkle with cheese of your choice.
