Penne with King Oyster mushrooms

The easiest and most delicious recipe with penne and the tasty & nutritious dried King Oyster mushrooms!

• 500g penne
• One package dried King Oyster mushrooms
• 2 finely chopped onions
• 1 clove of garlic coarsely chopped
• 1 tsp. oregano
• 4 Tbsp. olive oil
• 50ml white wine
• 100g low-fat yogurt
• 200g low fat cream cheese
• ½ cup chopped parsley
• Salt Pepper


Soak the dried King Oyster mushrooms in warm water for 15′.
Drain them, keep the water and cut them into pieces.
Boil the pasta 2 minutes less than the instructions and strain it.
Saute in a shallow pot in 2 tbsp. oil, at medium to high temperature, the onion and garlic until soft.
We can slow cooking down by adding water from the mushrooms.
Add the dried mushrooms and the rest of the oil, stir for 5 minutes and deglaze with the wine.
When the alcohol has evaporated, add the pasta and mix well.
Add the oregano, cream cheese, yogurt, a little olive oil, salt and freshly ground pepper.
Serve and sprinkle with parsley.
