Burger with King Oyster Mushrooms

Our favorite junk food healthier than ever!
A meal that will delight your vegan and non-vegan friends…

INGREDIENTS
For the mushrooms
• 4 greek King Oyster Mushrooms
• 240ml soy milk
• 220g flour
• 2 tbsp. salt
• 1 tbsp. cider vinegar
• 2 tbsp. corn flour
• 2 tbsp. smoked paprika
• 2 tbsp. freshly ground black pepper
• 4 tbsp. olive oil

For serving
• 4 burger buns
• 4 slices of vegan vegetable cheddar cheese
• 2 ripe tomatoes, cut into slices
• 4 baby lettuce leaves
• 4 tbsp. vegan mayonnaise

METHOD
Cut the King Oyster Mushrooms lengthwise into 3 equal pieces.
In a bowl, mix the flour, corn flour, smoked paprika, salt and black pepper.
In a separate bowl, mix the soy milk and vinegar.
Next, coat each piece of mushroom with the flour mixture and then dip in the milk and vinegar mixture. We repeat this step one more time to ensure a thick, even coating.
Heat the oil in a frying pan over medium-high heat and fry each mushroom for 3-4′ on each side, until golden brown and crispy.
Place three of the mushroom pieces on a bun, with a lettuce leaf, a slice of vegan cheddar cheese, two slices of tomato and a tablespoon of vegan mayo.

We serve the healthiest burger!
