A few words about King Oysters
They are well-known edible fungi and as their name indicates, they are the kings of Pleurotus mushrooms! We find them under many names: king mushroom, royal brown mushroom, french horn, pleurotus eryngii, king trumpet mushroom, king brown mushroom, boletus of the steppes, trumpet royale, aliʻi oyster!

They have a thick, tender and plump stem (stipos) & a smaller cap (pilus). When cooked they resemble a shell. King Oysters have superior umami* taste, strong aroma, crunchy texture… that take you on a culinary journey! In addition, they contain generous amounts of nutrients.

* It is derived from the Japanese words umai (うまい) that translates as “wonderful” and mi (味), meaning “taste”. Essentially, it is the fifth taste. It was established by the Japanese chemist Dr. Kikunae Ikeda. It describes the taste after sour, sweet, bitter and salty. It has been associated with the essence of deliciousness, maximum enjoyment and fullness of taste.
